No-Bake, No-Grandma, No-time-at-all Cookies & Very Apple Cider

A twist on a snack for your grandparents

My daily browse through numerous food blogs brought me to an easy recipe for no-bake cookies that only calls for two ingredients, and relatively cheap ones at that. However, the resulting cookie, “The Haystack” was about as interesting a two hour lecture on a Thursday night. The two ingredients? Chocolate chips and Fiber One, which has snack time at a nursing home written all over it. So I decided to add some excitement to this basic, bland (and cardboard-y) concoction. Et voilà! My very own recipe for No-Bake, No-Grandma, No-time-at-all Cookies. Test them out, they don’t even take fifteen minutes!Ingredients 2 cups Chex Cereal (Rice or Corn) 1 cup crushed pretzels 1 cup semisweet chocolate chips ½ cup Peanut M&M’s (plus extra for eating) ½ cup peanut butter 1 large ceramic bowl or a double boiler

1. Combine cereal and crushed pretzels in a bowl. 2. In a pot, boil about 2 inches of water. 3. Combine chocolate chips and peanut butter in your ceramic bowl, and once the water has started to boil place it over the pot. 4. Stir, and stir, and stir, until everything is the same consistency. 5. Pour the cereal and pretzels into your now chocolate and peanut butter soup and continue to stir. 6. Using two spoons, gather rounded clusters of chocolate-covered cereal and place on a cookie sheet. 7. Place a few M&M’s in each cookie. 8. Put cookie sheets into the freezer for about 30 minutes. Eat them room temperature or try them right out of the freezer! Either way, you’ll fall in love.

Dirty Apple Cider

As a native Vermonter, autumn means apple picking, pumpkin seed roasting, and a large mug of apple cider. After apple picking with friends, I was particularly inspired to incorporate some Vermont traditions into our Saturday night. The result: an apple-spiked drink that is sure to satisfy all your cravings (autumn-related and otherwise). It’s a simple and tasty way to begin an autumn night out! Ingredients: 5-7 oz Apple Cider 2 oz Smirnoff Apple Vodka

Combine in a tumbler and garnish with apple slices and cinnamon. Consume liberally.
