Eliminate Midterms Stress: Honey-Glazed Chocolate Banana Bread
This shit’s bananas. If the initial glaze isn’t enough for you to fall in love at first bite, just wait til you get to the surprise chocolate cookie center. Got some new friends to impress? Don’t feel like spending cash for your boyfriend’s birthday? This treat will do the trick every time.
For the bread: 3 large bananas 1 ¾ c. flour ¾ c. sugar ¼ t. baking soda ½ t. baking powder ¼ t. salt 1 t. cinnamon 2 eggs 1 stick of butter 1 ½ c. crumbled chocolate cookies 1 t. vanilla 2 eggs
1. Preheat oven to 350 degrees Fahrenheit. 2. Mix dry ingredients together in a large bowl (flour, sugar, baking soda, baking powder, salt, cinnamon) 3. In a large bag, crush the cookies or chocolate treat of your choice (wafers or chocolate candies make a tasty alternative). Set aside. 4. Mash bananas with a fork. 5. Melt butter and combine with eggs and vanilla. Slowly stir this wet mixture with dry ingredients and add the mashed banana. 6. Grease a bread pan with butter or vegetable oil. 7. Pour half of the mixture into the bread pan. 8. Distribute cookie crumbs evenly over the mixture in the bread pan and cover with other half of the mixture. 9. Bake for 50-60 minutes, or until brown and crusty on top. 10. Remove bread from the pan and place on cooling tray.
For the glaze: 2/3 c. honey ¼ brown sugar 1/3 c. butter
1. Melt butter in a saucepan. Add sugar and honey and whisk until even consistency. 2. Let sit for 3-5 minutes or until thick but still flows. Aim for a molasses-esque texture. 3. Pour the glaze evenly over the bread and stick it all in the freezer for about 30-40 minutes so the glaze hardens. 4. Slice into even pieces, or take a fork and dig in. Tip for extreme gluttons: spread on a thin layer of Nutella, then go into a food coma.
