Cinco de Mayo Edition: Blueberry Salsa & Spiked Siesta Smoothies

Take a break from stress-eating Acropolis pizza and Insomnia Cookies. In honor of Cinco de Mayo on Thursday, mix up some blueberry salsa, pair with tortilla chips, and squeeze in a quick siesta. Then get back to the chemistry textbook you haven’t opened all semester. The salsa is a sweet and spicy party in your mouth, so if you can manage to take a night off from studying, put on a sombrero and enjoy with one of our Spiked Siesta Smoothies.

Blueberry Salsa 6 fresh tomatoes, diced 1 apple, diced 3 c. blueberries ½ bunch chopped cilantro 1 large red onion, diced 2 Jalapeño peppers, diced 1 Tbsp. lemon juice

1. Combine tomatoes, apples, cilantro, onion, and peppers in a bowl. 2. Toss with lemon juice and add the blueberries. 3. Serve with tortilla chips.

Spiked Siesta Smoothies 2 c. pineapple Juice 1 c. orange juice 10 oz. tequila 1 banana 1 c. vanilla yogurt

1. Combine juice, banana, and yogurt in a blender. 2. Add tequila and blend thoroughly.
